Bringal, Carrot and Green Veg Medley

This is a seriously tasty combination and a smart way to feed a variety veg to your baby or toddler. Roasting some of the veg, to release the natural sweetness, and by adding the herbs and garlic adds fantastic flavour. Whenever I make these types of combinations I am always reminded of just how much flavour is packed in quality veggies, without any additional salt or sweetness needed.

This dish goes brilliantly with any protein (chicken, red meat, fish or even cheese). 

What you’ll need: 

  • 1 x bringal sliced in half
  • 1 cup broccoli florets
  • 4 medium-sized carrots, peeled with the ends chopped off
  • 1 cup spinach
  • 1/2 cup frozen peas
  • 1 clove garlic
  • 1 tsp thyme
  • 1 tsp oregano
  • 1 Tbs olive oil

Method:

  • Preheat oven to 180°
  • Place bringal, carrots and broccoli on a baking tray with the herbs, garlic and olive oil
  • Roast for 30 minutes
  • Remove from the oven and allow to cool slightly
  • Steam spinach in the microwave. Set aside and reserve the steaming liquid
  • Bring the peas and some water to the boil. Drain and set peas aside
  • Scoop the flesh out of the bringal halves and discard the skins
  • Combine all the ingredients in a mixing bowl
  • Add 3-5 Tbs of the liquid from steaming
  • Puree until the desired consistency  (add a little more of the steaming liquid if needed and puree until a finer consistency for younger babies)
  • Divide into individual portions and freeze until needed
